Runeberg's Day 5.2.

Runeberg's day is celebrated in Finland on 5 February.

Johan Ludvik Runeberg was one of Finland's national writers and the day is celebrated in Finland with a celebration of Finnish culture and of course with Runeberg's tarts, which are the recipe of Runeberg's wife, Frederika Runeberg, who was Finland's first female writer.

Here is the receipe for Runeberg's tarts, which can be found on Finnish coffee tables every year on 5 February.

Runeberg's tarts

1 egg
150 ml sugar
100 ml cream
100 ml grounded almonds
100 ml bread crumbs
150 ml melted butter
150 ml flour
1 tsp baking powder

Icing:
100 ml icing sugar
1 tblsp water

1. Heat the oven for 225 degrees celsius.
2. Melt the butter.
3. Whisk eggs and sugar.
4. Add cream.
5. Add almonds, bread crumbs and the melted butter.
6. Add the mixed flour and baking powder.
7. Put the mixture in muffin cones. Bake for 15 minutes.
8. Decorate with jam and icing sugar mixture.
